Me to Matt: Feel like a smoothie bowl for breakfast?

Matt: Oh yeah, for sure!

Me: Heads to kitchen to faff about trying to make strawberry love hearts πŸ€·β€β™€οΈπŸ€£ A girl’s gotta try right?

Excuse the messy presentation. I’m very new at this. Plus, have you seen my hair? I’m not real great on presentation in general!

But, oh man this smoothie bowl was all kinds of delicious! Creamy, sweet and filling. I’m playing around with ingredients trying to find the perfect balance between maximum tastiness and nutrition and a combo that keeps me full for longer, while also not blowing up to be the size of an even larger house than I already am.

The key here is to use avocado in your smoothie bowl. I know right? Kind of weirded me out when I first thought about it. But trust me, it makes the final blend c-r-e-a-m-y and full of good fats. Add in the banana and it’s like eating ice cream for breakfast. Yes please!

Recipe – Serves 2

1/2 a medium avocado

1/2 cup coconut milk from the carton

1 1/2 frozen bananas

Decent sized handful of strawberries

2 TBS vegan protein powder

Details

Chuck all ingredients in a high speed blender and blend the crap out of it

Serve in a fancy schmancy bowl – choose a coconut bowl for high instagram cred πŸ˜‰

Decorate with almond flakes and chia seeds
